Spiced Walnut Pimento Cheese
This pimento cheese is lightened up with greek yogurt and packed with heart-healthy walnuts.
Servings 2 Cups

- 1/2 cup walnuts
- 1 tbsp butter
- 1 tsp brown sugar
- 1/8 tsp cinnamon
- 1/8 tsp cayenne
- 1/8 tsp kosher salt
- For the pimento cheese
- 4 ounces cheddar
- 2 ounces pepper jack
- 2 tbsp pimentos minced
- 1/4 cup greek yogurt start light and add more
- Juice of 1/4 lemon
- 1/2 cup spiced walnuts
Melt butter in a skillet on medium low heat.
Add walnuts and spices and stir frequently for about 4-5 minutes, until walnuts are fragrant and begin to brown.
Remove from heat and allow to cool.
Shred cheese by hand or a food processor.
Chop pimentos if necessary.
Add all ingredients together and mix well by hand.
