Ingredients
4corn tortillas
1cuprefried beansor mashed beans
1bell peppersliced or diced
1/4cupenchilada sauce or salsa
1/4cuppickled jalapenos
1 1/3cupMonterrey jack cheeseshredded
2cupsfresh greens
Yogurt/sour creamavocado, cilantro and salsa for serving
Instructions
Preheat oven to 350*
Bake tortillas for 5 minutes.
Remove from oven and top with refried beans (1/4 cup per tostada), green pepper slices, sauce or salsa (1 tbsp each), jalapenos (a few on each) and cheese (1/3 cup each).
Bake for 10 minutes more.
Top with greens and all the Mexican fixins you like!
