Ingredients
2cans or 2.5 cups of cannellini beansdrained and rinsed
1cupchopped red pepperabout half of one
1cupchopped English cucumberabout 1/3 of a big one
1tbspchopped fresh dill
1cara cara orangesegmented
1/4tspkosher salt
1/4cupricotta salata
For the dressing
3tbspolive oil
1tbsporange juice
1/2tspDijon mustard
1small clove garliccrushed
Instructions
Combine all salad ingredients in a bowl. Toss.
Make dressing, pour over salad.
Top with cheese.
Serve at room temp or chilled. Flavors will develop over time!
