In a large stew pot, sauté onion and pepper until onion is transparent (if using onion)
Add minced garlic, then add stew meat to pot and cook until brown.
Add spices to meat mixture and stir well.
Add tomatoes, beans, and corn and let simmer for 30-45 minutes, stirring occasionally.
Serve over your choice of white rice, tortilla chips, or just enjoy it plain topped with plenty of cheese and sour cream!
