This recipe works well with tender baby spring greens, but you can also use the method on firm, adult greens too - they will just have more of a bite to them.

Ingredients
1giant salad spinner of baby mixed greens like kalecollards, turnip greens, chard
1tspkosher salt
2tspolive oil
Instructions
Wash and spin dry greens.
Top with salt and oil and rub with hands until greens get shiny and slightly wilted.
