Inspired by Ashley at www.edibleperspective.com and her Blueberry Coconut Cream Buckwheat bake! This guy is made from buckwheat flour, which you can make in a blender from raw buckwheat groats. I suspect any kind of flour will work. The frozen fruit plumps up and tastes like pie!

Ingredients
1/4cupbuckwheat flourground from raw buckwheat groats
1tbspbuckwheat groats
1tbspchia seeds
1/2tspcinnamon
1/4tspbaking powder
1/2mashed banana
1/4cup1% milk
1/4cupfrozen mixed fruitwas worried the strawberries would be too big/liquidy but they were the best part!!
1tspvanilla
1whole egg
1tbspcoconut butter flakesnot quite as good as Ashley’s stuffed cream and a bit undetectable
Instructions
Preheat oven to 350*
Mix dry [I do this the night before in a jar]
Mix wet.
Pour wet into dry.
Grease oven safe dish.
Bake for 30 minutes.
Cool slightly and topped with Flying Squirrel PB – Sneaky Cinnamon and GH jam – plus coconut sprinkles!
