The chickpeas were soaked overnight, water changed and then crockpotted on LOW for 8 hours – PERFECTION!!!

cups
chickpeas
1/4
cup
tomato paste
1/4
cup
chopped sundried tomatoes
2
leftover roasted eggplant rings
or any other veggie you like
1
tsp
dried oregano
Salt + pepper to taste
1
tsp
Garlic gold nuggets
1/2
cup
shredded jack cheese
Instructions
Add chickpeas to a hot skillet.
Stir in everything.
Heat through.
Plate.
Top with cheese.
Done!
